Happy New Year!
I hope that everyone had a fun-filled and relaxing break. I am BUMMED that tomorrow I head back to school and work. I absolutely love my job and my kids, but thinking about not wandering around the house all day while running errands and gym-ming it up is not so pleasant. I officially ran out of things to do around the house (crazy, right?). We put our Christmas tree away today….but that’s it! Oh, and yoga at 5:30.
Speaking of New Years, this year I cooked up some Hoppin’ John for the New Year. I know that eating black-eyed peas on New Years is lucky, but I have never gotten the energy after New Years Eve to do it. I read that Hoppin’ John is called Skippin’ Jenny ONLY the day after New Year. That makes sense… jk. I have eaten Hoppin’ John before and it unfortunately is easy to make way too bland. This recipe gives it some spice and throws in some andouille sausage so my boyfriend was a happy camper. Also, I was a little freaked out to be cooking and eating a ham hock because it is almost a pig’s foot. However, that piece of animal was delicious. Woah. I will be cooking more soups and adding it in there, the flavor was awesome.
